Pancakes with Warm Apple and Cinnamon Syrup
Get those sleepy heads out of bed with the aroma of Pancakes with Warm Apple and Cinnamon Syrup wafting through your home.
Ingredients
TO MAKE THE PANCAKES
  • 1 1/2 cups milk
  • 1/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups / 300 g cake flour / all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1/3 cup / 75g caster sugar or white sugar
  • 25 g butter or margarine melted
TO MAKE THE WARM APPLE CINNAMON SYRUP
  • 2 tablespoon butter
  • 2 apples peeled, cored, and diced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup maple syrup OR golden syrup
Instructions
TO MAKE THE PANCAKES
  1. Whisk milk, buttermilk and vanilla together in a jug.
  2. Sift flour and bicarbonate of soda / baking soda into a bowl.
  3. Stir in sugar. Make a well in centre. Add milk mixture and whisk until just combined.
  4. Heat a large non-stick frying pan over medium heat. Brush pan with butter /margarine or oil Using a ladle, pour mixture into the pan and smooth and even the mixture into a circle with the back of the ladle.

  5. After about 40 seconds , flip the pancake over when you see bubbles appear on the surface. Repeat on the other side for about 40 seconds again and remove from the heat and put it onto a plate. This process is repeated until all the batter is used up. You can keep the stack of pancakes warm by covering lightly with foil until you are ready to serve with the apple and cinnamon syrup.

TO MAKE THE APPLE CINNAMON SYRUP
  1. Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in golden or maple syrup. Drizzle over warm pancakeS
