Do you know I am such a fan of all types of homemade bread recipes…There is something about homemade bread that just seems so comforting. Maybe it is the delicious smell that fills your home while it is baking or the amazing taste which you can never get from packaged store bought bread. Whatever it is, I know that I am really hooked on homemade bread.
I love trying out types of bread from different countries ….because one thing that is for certain is what they all have in common is exceptional taste. Greek pita flatbreads are no different, soft, light and so full of delicious flavor with endless fillings and toppings.
Sometimes referred to as pocketless pita, these flatbreads are not cut open to be filled, but more as the name says flatbread which serves as a base for filling, then folded in half. They are not baked like the one in my pita recipe but cooked on the stove top on a lightly greased pan.
Very easy to make and with very basic ingredients this is a great recipe to try especially if you are working with yeast for the first time. The dry ingredients are simply mixed in a large bowl to which warm water is added. It is then kneaded for just 5 minutes, placed back into the bowl and left to rise for about 30 minutes. Thereafter it is rolled into disks and cooked for a minute each on both sides. And that is it. Make sure that the cooked flatbreads kept covered to ensure that they remain soft. I just usually cover it with a sheet of foil keeping the flatbreads perfectly soft.
It is best to use bread or strong flour for this recipe as this type of flour will contribute to its bread like texture. In the recipe I also used instant fast action yeast, but you can use active dry yeast as well, and the instructions for both are given in the recipe.
Try this recipe and I can promise that you will never go back to store bought again.

- 2 teaspoons active dry yeast OR instant yeast
- 1 teaspoon sugar
- 160 ml warm milk
- 80 ml warm water
- 320 g bread / strong flour
- 1 teaspoon salt
- 1 tablespoon oil
HOMEMADE GREEK PITA FLATBREADS
then combine the sugar, yeast, water and milk in a bowl. Set the bowl aside for 5 minutes until the mixture starts to froth. In another bowl, combine the flour, the salt mix to combine. Add the oil to the yeast mixture and stir to combine. Add the yeast mixture to the flour mixture.Transfer mixture to a lightly floured working surface. Knead for 4-5 minutes until the dough becomes smooth.Brush a bowl with some oil and add the dough. Continue with the rest of the recipe at number 2
Then combine flour, sugar and salt together, add the yeast and mix together
Add the oil. Combine the warm milk and water together and mix it into the dough. Transfer mixture to a lightly floured working surface. Knead for 4-5 minutes until the dough becomes smooth. Brush a bowl with some oil and add the dough. Continue with the rest of the recipe at number 2
Cover with a towel and let it rise for about 30 minutes, until it rises and doubles in size.
Place a pan over medium heat.
Deflate the dough by kneading it for a minute. Break out about 8 pieces of dough
Place pieces of dough on a lightly floured board. Use a rolling pin to roll out each piece of dough to a circle 20 cm in diameter.
Cook the pita bread for 1-2 minutes on each side in the pan, until they puff up slightly. Keep the cooked breads covered with a cloth to ensure that it remains soft.
